berries. beets. battlestar galactica.

I recently had a Beet & Strawberry Smoothie like this at Green Bliss Café in Fullerton...and have since then become obsessed with making them at home. I'm sure some of you have a raised eyebrow right now as drinking beets may not sound all that appealing. I was skeptical too...and I love beets. But the strawberries added a nice tartness to it and it was strangely refreshing and dessert like.

Beets are also a great source of energy, so this makes for a perfect breakfast smoothie to get you through the morning. Good and good for you. Boom.

Choose organic produce when and if possible.
You'll need :
2 cooked beets, skin off (I used one yellow, one red)
1 handful baby spinach
1 cup frozen strawberries
¾ cup frozen pineapple
1 teaspoon Chia Seeds
¼ cup water
1 ¼ cup unsweetened almond milk
1 tablespoon agave syrup (optional)

Blend till smooth and bright magenta. You always have the option to add more liquid if you want a thinner consistency. Enjoy!

namesake

This first post is dedicated to my dear friend, Seti. He accidentally inspired the name of this blog and for that, I give major props. (That branding/naming business is no joke).

Here are five things about my friend:
1) He can speak 3 languages (English, Spanish, French); his mom can speak 9. (Incidentally, this is my super power wish).
2) In 5 years of friendship, I have yet to see him loose his cool. The only story I have heard about him losing his temper was during high school. People were throwing grapes at football practice and he requested them to stop; a few minutes later, one hit his head...and the rest is now a bit of a raging blur. He missed Homecoming that year. Womp womp.
3) The longer you know him, the more you start thinking..."this guy reminds me of a dinosaur....yes, a cool, lactose intolerant, slow walking dinosaur." He has a certain je ne sais quois...a dinosaur swag if you will.
4) One of his vices is to ingest fruit snacks and beer in the shower. I hear it's amazing to crack open a cold one after a long day of work in the shower...you should try it.
5) He's got...dancing feet, the most eclectic choices in music, a heart of gold.

My name is Anabel...I'm so glad you're here! Welcome to Beets + Pieces.
