I recently had a
Beet & Strawberry Smoothie like this at Green Bliss Café in Fullerton...and have since then become obsessed with making them at home. I'm sure some of you have a raised eyebrow right now as drinking beets may not
sound all that appealing. I was skeptical too...and I love beets. But the strawberries added a nice tartness to it and it was strangely refreshing and dessert like.
Beets are also a great source of energy, so this makes for a perfect breakfast smoothie to get you through the morning. Good and good for you. Boom.

2 cooked beets, skin off (I used one yellow, one red)
1 handful
baby spinach
1 cup frozen
strawberries
¾ cup frozen
pineapple
1 teaspoon
Chia Seeds
¼ cup water
1 ¼ cup
unsweetened almond milk
1 tablespoon agave syrup (optional)
Blend till smooth and bright magenta. You always have the option to add more liquid if you want a thinner consistency. Enjoy!
